    Tibetan kefir grains are a living culture that, with proper care, can be used for a long time, and can even continuously grow and multiply. Once you find a routine that suits your kefir grains and your environment, making kefir can easily become a simple, everyday habit. 🥛🌿

    However, caring for kefir grains isn't just about pouring milk over them occasionally. The right amount of milk, fermentation time, temperature, the container and tools used are all important, as is how to store the culture when you don't want to make kefir for a few days or even longer periods.

    In this guide, I will also introduce the method I use myself for daily kefir making. I'll show you how I measure the amount of milk based on the weight of the kefir grains, why I use a flatter food storage container, how I determine if the kefir is ready, how I store the culture in the fridge or, for longer breaks, in the freezer, and how I restart it after freezing.

    It's important to note that part of the method presented here is based on my own practical experience. The activity and behavior of kefir grains can vary between cultures, depending on the milk and environmental conditions, so it's worth observing how your own kefir grains perform.

    Why is it worth getting to know your own kefir grains?

    Kefir grains are a living culture, so not every batch will turn out exactly the same. Temperature, the milk used, the amount and activity of the kefir grains, and the duration of fermentation can all affect the final result.

    However, after a few weeks of regular kefir making, it will be easier to recognize how your own culture behaves.

    Kefir grains are not a single-use ingredient. Under proper conditions, they can be reused again and again, and can grow over time. That's why it's worth paying attention not only to the finished kefir, but also to the kefir grains themselves: their condition, growth, and fermentation speed tell a lot about how they are feeling.

    My daily kefir making routine – 24-hour cycle

    🥛 The simplest way to keep Tibetan kefir grains working well long-term is to establish an easy-to-follow, regular routine.

    I use my own kefir grains in a 24-hour cycle. Every day, I strain the ready-made kefir, prepare the next batch, and restart the fermentation with fresh milk.

    1. I strain the finished kefir

    After approximately 24 hours, I check the kefir. If I gently move the flatter container and the milk no longer flows freely but is uniformly thick and creamy, then for me it has reached the right consistency.

    I strain the finished kefir, then place it in a clean container and put it in the refrigerator.

    🧊 I find it tastier cold, so I usually wait until it cools down well before consuming it.

    2. I prepare the kefir grains

    After straining, I rinse the kefir grains with cold water, then drain them thoroughly.

    Next, I weigh the total mass of the kefir grains.

    3. I calculate the required amount of milk

    I use a simple ratio for my own kefir grains:

    I calculate nine times the weight of the kefir grains as milk.

    For example, if:

    • I have 24 grams of kefir grains,
    • then 24 × 9 = 216 grams of milk.

    Then I zero the scale and pour the calculated amount of milk directly onto the kefir grains.

    This is a very simple method because I don't have to guess how much milk to use every time.

    The 9× ratio is my own tried-and-tested method for making kefir. It is not necessary to use exactly the same ratio for every kefir culture. If your own kefir grains work well with a different amount of milk, it's worth adjusting your routine accordingly.

    4. I cover it, but not airtight

    I put the lid on the container, but do not seal it airtight.

    Carbon dioxide can also be produced during fermentation, so it's important that the gases produced have a way to escape.

    Then I place the container on the kitchen counter in a spot protected from direct sunlight.

    And with that, the next 24-hour cycle can begin. 🌿

    The next day, everything starts over: straining, preparing the kefir grains, weighing, measuring the milk, and starting another fermentation.

    How much milk do kefir grains need? – The 9× method

    🥛 One of the simplest methods for determining the right amount of milk is to start with the weight of the kefir grains.

    In my daily kefir making, I use the 9× ratio: I multiply the weight of the drained kefir grains by nine, and add that many grams of milk.

    A simple example

    If the weight of the kefir grains is:

    24 grams

    then:

    24 × 9 = 216 grams of milk

    So, for 24 grams of kefir grains, I use approximately 216 grams of milk.

    If the kefir grains grow over time, I adjust the amount of milk accordingly.

    For example:

    • 20 g kefir grains → 180 g milk
    • 24 g kefir grains → 216 g milk
    • 30 g kefir grains → 270 g milk
    • 40 g kefir grains → 360 g milk
    • 50 g kefir grains → 450 g milk

    This way, as the kefir grains grow, the amount of kefir produced can be gradually increased.

    Why do I like this method?

    Because it's simple and reproducible.

    You don't have to guess every day, "approximately this much milk will surely be fine." I simply weigh the kefir grains, do the multiplication, and I immediately know how much milk to add.

    This is especially practical when the kefir grains are continuously growing, and you'll have a noticeably larger amount of culture in a few weeks.

    💡 Good to know

    The milk-to-kefir-grain ratio is not a universal recipe. The activity of different cultures can vary, and the speed of fermentation is influenced by temperature, milk composition, and other conditions. The 9× ratio should therefore be treated as your own tried-and-tested starting point, then fine-tuned based on the finished kefir.

    What to do if it's ready too quickly?

    If the kefir thickens much sooner than the usual 24 hours, becomes very sour, or whey quickly appears in it, this may indicate that fermentation is too intense under the given circumstances.

    In this case, you can experiment with more milk or a shorter fermentation time.

    However, if it's still too thin after 24 hours, it's worth examining the temperature, the activity of the kefir grains, and the type of milk used.

    The goal is not to follow the same hourly schedule under all circumstances, but to find a balance where your kefir grains work well, and the taste and consistency of the finished kefir suit your preferences.

    Why do I use a flat food storage container? – The secret to more homogeneous kefir

    🫙 Many types of containers can be used for making kefir, but I use a flatter, wider food storage container. For me, there's a very practical reason for this: the milk layer is shallower, and the kefir grains can spread out more evenly within it.

    What happens with a taller milk layer?

    If you pour milk into a taller, narrower container, some of the kefir grains may eventually float to the top of the milk.

    In this case, the kefir grains do not necessarily remain evenly distributed throughout the entire volume of milk.

    Where there are more kefir grains, fermentation may be more intense, while in the middle part of the container – where there is less culture – the process may proceed more slowly.

    As a result, one part of the milk may become thicker and sourer, while fermentation is less advanced elsewhere.

    Why has the flat container worked for me?

    In a flatter container, the milk layer is shallower, so the kefir grains are contained within a much smaller "milk layer."

    In my experience, this results in more even, homogeneous kefir.

    You don't need any special tools: a suitably sized, clean, food-grade flatter container is sufficient.

    💡 Good to know

    Using a flat container is my own tried-and-tested method. It doesn't mean that good kefir cannot be made in a taller jar. Many kefir makers use traditional jars and achieve good results. I chose the flatter container because, with my own kefir grains, I experience more even fermentation and more homogeneous kefir this way.

    A small trick at the end

    As the 24 hours approach, the closed, but not airtight, container can be gently moved.

    If the milk no longer flows freely but rather moves as a continuous, thicker mass, that's a sign for me that the kefir is ready.

    However, if it's still liquid and "sloshing," I usually give it a little more time.

    This is a simple, everyday method that doesn't require any special measuring tools – just a little experience. 😊

    What Milk Do I Use, and Why?

    🥛 Milk is the most important "food" for Tibetan kefir grains, so choosing the right milk is crucial. For daily kefir making, I use 2.8% pasteurized cow's milk.

    This is primarily for practical reasons: it's easy to get, can be stored in the fridge, and doesn't require any special preparation steps.

    Why Don't I Regularly Use Raw Milk?

    When using raw milk, special heat treatment might be necessary due to microbiological safety concerns. In this case, the milk needs to be boiled or properly heat-treated, then cooled back down to a suitable temperature for the Tibetan kefir grains.

    I don't need to do this, so I simply take pasteurized milk from the fridge and use it to prepare the next batch of kefir.

    During fermentation, the milk gradually warms up to room temperature anyway.

    2.8% Milk Works Well for Me

    I can make kefir with a pleasant texture and taste from 2.8% milk, which is why I use it regularly.

    Of course, this doesn't mean that good kefir can only be made from this type of milk. Milks with different fat contents can result in kefir with varying textures and tastes, so it's worth experimenting based on your own experience.

    🐐 What About Goat's Milk?

    Goat's milk can also be suitable for making kefir, and its composition differs from cow's milk. Research suggests that different types of milk can affect both the microbial community of the kefir grains and the properties of the finished kefir.

    I consider goat's milk to be an exceptionally good ingredient if someone has access to high-quality, properly handled goat's milk.

    🥛 And UHT Milk?

    If there's no other option, you can also make kefir from UHT milk.

    However, I tend to view this as an emergency or occasional solution. In my experience, the taste and texture of kefir made from UHT milk are not as good as those made from regularly used pasteurized milk.

    This is partly because UHT treatment heats the milk to a very high temperature, which alters some of its components. This doesn't mean UHT milk is "bad"; it simply behaves differently as an ingredient during kefir making.

    💡 Good to know

    You don't necessarily have to choose the most expensive or special milk for making kefir. The most important thing is to use milk of reliable quality, that has been properly processed, and that you can regularly access. If you find a milk that your Tibetan kefir grains thrive on, and from which you like the finished kefir the most, it's worth sticking with it.

    And What About A1 and A2 Milk?

    The beta-casein in cow's milk can exist in several genetic variants, with A1 and A2 being the best known. The proportion of these can vary in different milk breeds.

    However, the topic is often oversimplified online. It's not accurate to generally state that a particular milk is "easier to digest" for everyone, so it's better to treat this as an individual dietary matter.

    If you are specifically interested in A2 milk, it's worth checking the exact origin and labeling of the milk.

    Where and How to Ferment Your Kefir? – Temperature, Light, and Covering

    🌡️ For Tibetan kefir grains, the fermentation conditions are at least as important as the milk itself. Temperature, light, and covering the container can all influence how quickly your kefir is made.

    I ferment my own Tibetan kefir grains at room temperature, on the kitchen counter, in a place protected from direct sunlight.

    🌡️ Why at Room Temperature?

    Traditional milk kefir preparation typically takes place at room temperature. At this temperature, the microorganisms in the Tibetan kefir grains actively ferment the milk.

    A too cold environment can slow down the process, while a warmer environment can speed it up. This is why in summer, the same amount of kefir grains might make kefir in a shorter time than in winter.

    Therefore, 24 hours is a proven starting point for me, not a mandatory duration under all circumstances.

    ☀️ Don't Place It in Direct Sunlight!

    I always place the fermentation container in a place protected from light.

    There's no need for the Tibetan kefir grains to be exposed to direct sunlight, so a shadier part of the kitchen counter can be suitable.

    🫙 How to Cover It?

    During fermentation, gases, including carbon dioxide, can form, so it's not advisable to seal the container completely airtight.

    I place the lid of my flat food container on top, but I don't close it tightly.

    This protects the container from dust and other contaminants while preventing a completely sealed system from forming.

    🕐 How Long Should It Take?

    Traditional milk kefir fermentation often takes approximately 18–24 hours at room temperature, but the actual time depends on several factors.

    For me, the 24-hour cycle works well, and I also consider the condition of the kefir.

    If I gently move the flat container and the milk no longer flows freely but moves as a continuous, thicker kefir, then I generally consider it done.

    However, if during fermentation, the whey is visibly separating, it may indicate that the process is more advanced.

    💡 Good to know

    The speed of fermentation is not always the same. If the kitchen is warmer, the kefir may be ready faster; in a cooler environment, it may take more time. Therefore, it's worth observing the texture and changes of the kefir, not just watching the clock.

    ⚠️ An Important Safety Rule

    The fermentation container should always be kept clean, and you should only consume the finished kefir if its appearance, smell, and texture are appropriate.

    If you notice mold, unusual discoloration, or an unpleasant smell indicating spoilage, do not consume the kefir, and do not automatically continue to use the culture.

    Fermentation is a natural process, but it's still important to follow basic food hygiene rules.

    What happens to Tibetan kefir grains in 24 hours?

    🦠 When you place Tibetan kefir grains into fresh milk, a natural fermentation process begins. Kefir grains are not a single microorganism, but a complex community of bacteria and yeasts that together transform milk into kefir.

    During this process, the original properties of the milk gradually change: it becomes thicker, develops a sourer taste, and acquires the characteristic aroma typical of kefir.

    🦠 The microorganisms in kefir grains get to work

    Tibetan kefir grains contain various lactic acid bacteria, yeasts, and other microorganisms living together. Once in the milk, these microorganisms utilize some of the milk's nutrients while producing various fermentation byproducts.

    One important result of this process is the formation of lactic acid, which contributes to kefir's tart taste and also causes the milk proteins to change.

    Additionally, yeasts can produce carbon dioxide and small amounts of alcohol. The quantity of these depends on the kefir culture and the fermentation conditions.

    🥛 The milk gradually thickens

    As fermentation progresses, the milk becomes less liquid and increasingly adopts the creamy consistency characteristic of kefir.

    This is one of the easiest visual signs that your Tibetan kefir grains are actively working.

    By the end of the process, the kefir will have a much more pronounced sour taste and the distinctive aroma of fermented milk.

    🧪 What happens to milk sugar (lactose)?

    The microorganisms in Tibetan kefir grains also utilize the lactose found in milk. Some of this lactose is converted into fermentation byproducts.

    However, it's important to note that fermentation does not automatically remove all the lactose from the milk. Some lactose usually remains in the kefir, so it cannot be generally stated that it is problem-free for everyone with lactose intolerance.

    🫧 Why might gas be produced?

    During the activity of yeasts and certain bacteria, carbon dioxide can also be produced.

    This is why it's important not to seal the fermentation vessel completely airtight.

    Due to this, you might sometimes observe a slight fizz or tiny bubbles in the kefir.

    ⏰ What happens if you leave it too long?

    If the Tibetan kefir grains ferment the milk for longer than necessary, the kefir can become increasingly sour, and whey may start to separate.

    Whey is typically a clear, slightly yellowish liquid that contains some of the water content and dissolved solids from the kefir.

    If only a small amount of whey appears, it's not necessarily a problem. It rather indicates that the fermentation has reached a more advanced stage.

    Kefir production does not happen in a single moment. Fermentation is a gradual process: the milk slowly thickens, sours, and then, after a longer period, whey can separate more noticeably. Therefore, it's worth learning to recognize the state in which you find the kefir most delicious.

    🌿 The kefir grains themselves may grow

    While the Tibetan kefir grains ferment the milk, the culture itself can also grow under proper conditions.

    This is why you might find that after a few weeks or months of regular kefir making, you have more kefir grains than you started with.

    This growth is a natural part of caring for a living culture – and it also means that over time, you can make more kefir, or even share your excess kefir grains with others.

    The growth and reproduction of Tibetan kefir grains

    🦠 One of the special characteristics of Tibetan milk kefir grains is that, under appropriate conditions, they do not get used up but can continuously grow and reproduce.

    If you regularly ferment them in fresh milk, you may eventually notice that the mass of the culture increases. This is a natural part of how a living kefir culture functions.

    📈 How fast can they grow?

    The rate of growth is not uniform for all kefir grains. It can depend on factors such as the condition of the culture, the milk used, the fermentation conditions, and the temperature.

    In my own kefir grains, I find that a 24-gram batch can grow by approximately 2–3 grams per day under suitable conditions.

    Of course, this is not a guaranteed growth rate but an observation from my own culture.

    ⚖️ Why is it worth weighing them occasionally?

    If you regularly weigh your Tibetan kefir grains, you can clearly see how your culture is changing.

    I weigh the drained kefir grains before each new fermentation. This is also practical because, with the 9x milk dosing method I previously described, I can always calculate the amount of milk needed for that particular batch.

    For example, if the kefir grains grow from 24 grams to 30 grams over time, then for the next batch:

    30 × 9 = 270 grams of milk

    will be needed, based on the ratio I use.

    🥛 What happens if you have too much?

    After a while, you might find that you have more Tibetan kefir grains than you need for your own kefir making.

    In such cases, you don't necessarily have to keep increasing the amount of milk. There are several ways to utilize the excess culture.

    💚 You can give them to family members or friends who want to make their own kefir.

    🥛 You can increase the amount of kefir you make if you need a larger batch.

    ❄️ You can properly store them for later, if you want to have a backup culture.

    🌱 Is growth a good sign?

    The growth of Tibetan kefir grains generally indicates that the culture is active and in good conditions.

    Of course, growth alone does not prove that all conditions are perfect, so it is still worth paying attention to the appearance, smell, and properties of the finished kefir.

    💡 Good to know

    Tibetan kefir grains do not necessarily grow as a single large, continuous "mushroom." The culture can consist of smaller or larger grains or lobes, which may separate over time or combine with new parts. Therefore, changes in size and shape alone do not indicate a problem.

    🧑‍🍳 Excess kefir grains mean new opportunities

    If you make kefir regularly, you might eventually find yourself with more Tibetan kefir grains than you need.

    I consider this an opportunity rather than a problem.

    With a little excess kefir grains, others can also start their own homemade kefir journey. This way, a single living culture can continue to thrive in multiple households over time.

    This is one of the interesting properties of Tibetan kefir grains: they are not simply an ingredient you use, but a living culture that can be nurtured and propagated. 🌿

    Do You Need to Wash Your Tibetan Kefir Grains?

    🧼 You can find differing opinions on cleaning kefir grains. Some rinse them after every fermentation, while others believe it's unnecessary and simply place them in fresh milk after straining.

    I personally rinse my kefir grains with cold water after every 24-hour fermentation, then drain them thoroughly and weigh them.

    🚿 How I Rinse My Kefir Grains

    After straining the finished kefir, I gently rinse the kefir grains with cold water.

    I don't rub or squeeze them, just rinse them thoroughly, then let the excess water drain off.

    Afterward, I weigh the kefir grains and calculate the amount of milk for the next batch based on that weight.

    For me, this is part of my daily routine, and it also allows me to accurately track how the culture is growing.

    Why I Use Cold Water

    I use cold water to rinse the kefir grains. I do not use hot or very warm water because kefir grains consist of living microorganisms, and I don't want to expose them to heat.

    That's why I always let the culture drain well after rinsing before returning it to fresh milk.

    🥄 What Tools Should You Use?

    For contact with kefir grains, I use plastic or wooden tools.

    My strainer and all other tools that come into contact with the kefir grains are made of these materials.

    💡 Good to know

    You often hear the statement that "kefir grains must not come into contact with metal at all." However, sources on this topic are not entirely consistent. It is definitely advisable to avoid prolonged contact with reactive or rusting metals. I simply choose plastic and wooden tools, so I don't have to worry about it.

    The most important thing in all cases is that the tools are clean and food-safe.

    Do You Need to Rinse Them Every Time?

    There isn't one universal answer to this.

    Some kefir makers rinse their kefir grains after every fermentation, while others don't wash them at all, just strain them and place them in fresh milk.

    I use the former method, and the daily cold water rinse works well for me.

    If you choose a different method, that doesn't automatically mean you're making kefir incorrectly. It's worth observing how your own culture works and developing the most comfortable routine for you.

    ⚠️ What to Always Pay Attention To

    Using clean tools is much more important than exactly which rinsing method you choose.

    Regularly and thoroughly clean the jar or food container, the strainer, and all other tools used, and make sure no detergent residue remains on them.

    Kefir grains are a living culture, so hygiene is one of the most important parts of regular kefir making.

    What Happens If You Don't Make Kefir for a Few Days?

    ✈️ You don't have to make kefir every day to maintain your Tibetan kefir grains. If you're traveling for a few days or simply want to take a break, you can rest the culture under appropriate conditions.

    The simplest solution in such cases is the refrigerator.

    ❄️ Shorter Break: Storing in Milk in the Fridge

    If you only want to stop making kefir for a few days, place the kefir grains in fresh milk, then put them in the refrigerator.

    Cold significantly slows down fermentation, so the kefir grains work much slower than at room temperature.

    In my own practice, I keep the kefir grains in the fridge like this for about 5 days.

    When I want to make kefir again, I take them out of the fridge, pour off the storage milk, and then prepare the kefir grains as usual for the next fermentation.

    🥛 What Happens in the Fridge?

    In the refrigerator, the kefir grains do not stop completely, their activity just slows down significantly.

    Therefore, it's not advisable to "forget" about kefir grains stored in the fridge for a long time.

    However, if you're only taking a short break of a few days, this can be a simple and practical solution.

    💡 Good to know

    The storage time in the fridge may not be the same for all kefir grains. The condition of the culture, the milk, and the refrigerator temperature can all play a role. The approximately 5 days mentioned here is my own proven practical method.

    🧳 What if You're Traveling for a Longer Period?

    If you don't want to deal with kefir grains for several weeks or even longer, storing them in the refrigerator may no longer be the most convenient solution.

    In such cases, freezing may be an option, provided you prepare the culture properly.

    However, this should be treated separately, as after freezing, the kefir grains may need several fermentation cycles to regain their previous activity.

    In the next section, I will show you how I store kefir grains for longer breaks and how I reactivate them after freezing.

    Longer Break – How to Freeze Your Kefir Grains

    ❄️ If you don't want to make kefir for several weeks or even longer, freezing Tibetan kefir grains is a possible storage method.

    However, it's important to note that freezing temporarily inactivates the microbial community of the kefir grains, and after thawing, they may need time to regain full activity.

    Here's how I typically store my own kefir grains during longer breaks.

    1. Rinse Thoroughly

    First, I thoroughly rinse the kefir grains with cold water to remove any residual milk.

    2. Let Them Drain Well

    Then, I let as much water as possible drain off them.

    The goal is to ensure no excess liquid remains on them before freezing.

    3. Measure the Quantity

    I weigh the drained kefir grains and record their weight.

    This is practical because later I will know exactly how much I took out of the freezer.

    4. Package Them

    I place the kefir grains in plastic wrap or a clean, food-safe bag, then seal it.

    It's advisable to package them with as little air around them as possible.

    5. Into the Freezer They Go

    Afterward, I place the packaged kefir grains in the freezer.

    I primarily use this for longer breaks when I anticipate not making kefir for several weeks.

    💡 Good to know

    Freezing does not result in the same rapid reactivation for all kefir cultures. The microbial composition of different kefir grains can vary, so the regeneration time after thawing may also change.

    Therefore, freezing should be treated more as a long-term storage option rather than part of daily kefir grain care.

    ❄️ Why Record the Weight Before Freezing?

    If, for example, you stored 30 grams of kefir grains, you can easily identify which batch it was later.

    If you store several separate batches of kefir grains, you can even write on the packaging:

    "Tibetan Kefir Grains – 30 g – August 2026"

    This way, you'll always know exactly what you stored.

    However, before using frozen kefir grains, there's another important step: you need to gradually return them to normal fermentation.

    How to Revive Frozen Kefir Grains?

    ❄️➡️🥛 Kefir grains removed from the freezer may not immediately perform the same way they did before freezing. After being exposed to cold, they might need time to fully regain their milk-fermenting activity.

    I gradually reactivate my own kefir grains, and I don't expect the first one or two batches to produce the same quality kefir as my regularly used culture.

    1. Thaw in Lukewarm Water

    First, I let the frozen kefir grains thaw in lukewarm water.

    I don't use hot water because kefir grains contain live microorganisms, which I don't want to expose to high temperatures.

    Once they are completely thawed, I pour off the water.

    2. Rinse with Cold Water

    I then rinse the thawed kefir grains with cold water and let them drain thoroughly.

    Afterward, I weigh them the same way I do for everyday kefir preparation.

    3. Place into Fresh Milk Again

    Based on the measured kefir grains, I calculate the required amount of milk and then place them into fresh milk.

    I start the fermentation process just as I would during my usual daily routine.

    🥛 The First Batches May Be Different

    After freezing, the first one or two batches of kefir may not be as delicious or have the same consistency as before.

    This doesn't necessarily mean there's a problem with the kefir grains. The culture may need time to regain proper activity.

    At this point, I don't give up; instead, I continue with the usual 24-hour cycles.

    In my experience, after the first one or two filtrations, the kefir grains gradually "recover" and start producing the kind of kefir I'm accustomed to.

    Don't judge the condition of your kefir grains based on the first batch after freezing. The speed of reactivation can vary by culture. Give it a few fermentation cycles, and in the meantime, observe its consistency, smell, taste, and how quickly the milk thickens.

    When Should You Be Cautious?

    If, after reactivating your kefir grains, you don't experience proper fermentation over several cycles, or if the appearance of the culture noticeably changes, it's worth stopping and checking if the conditions are appropriate.

    If mold, unusual discoloration, or an unpleasant smell indicating spoilage appears, do not consume the prepared kefir, and do not automatically continue using the culture.

    The goal is for the kefir grains to gradually return to their usual activity – not to achieve perfect results after a single fermentation.

    How Do You Know If Your Kefir Grains Are Healthy?

    When I want to make kefir again, I take it out of the fridge, pour off the storage milk, then rinse the kefir grains, drain them, and place them back in fresh milk.

    The great advantage of a shallow food container is that it's easy to observe the consistency of the kefir in it.

    After about 24 hours, I gently move the container.

    If the milk no longer flows freely from one side to the other, but instead moves in a uniformly thick, creamy consistency, then for me, the kefir is usually ready.

    At this point, I strain the kefir grains, and place the finished kefir in the refrigerator.

    🥛 What Happens If You Leave It Longer?

    If you leave the kefir grains in the milk, fermentation continues.

    The kefir can become increasingly sour and thicker, and later, whey may appear in it.

    Whey is a translucent, watery, slightly yellowish liquid that can separate from the kefir.

    If only a little whey is visible, it's not necessarily a problem. Rather, it indicates that fermentation is already in a more advanced state.
